Celebrity Chef Bobby Flay delivers inspired flavors and bold Southwestern fare with his iconic Las Vegas restaurant — Mesa Grill at Caesars Palace.

Combining Flay's signature American cooking style with the tastes of the Southwest and his love of grilling, Mesa Grill offers dishes that will delight the senses. Between the delicious food and the delightful atmosphere, the Las Vegas restaurant earned a place on Condé Nast Traveler’s Hot 100 list.

The physical space was a vision of renowned restaurant designer David Rockwell, and features rich and vibrant colors and textures in an open space that are reminiscent of the American Southwest. 

On the brunch, lunch and dinner menus at his Caesars Palace restaurant, Chef Bobby Flay presents delectable dishes. There is an expansive tequila and mezcal selection, along with an extensive wine list.

A cocktail menu features signature drinks such as the Mesa Pisco Sour, Bitter Frenchie and, of course, the perfectly mixed Mesa Grill Margarita. Taste Chef Bobby Flay’s bold Southwestern flavors at Mesa Grill Las Vegas exclusively at Caesars Palace.

Expert Tips 

  • The Tequila selection has only 100% Blue Agave tequilas. For Mesa Grill, it is not about having the biggest selection, but the finest. Signature margaritas include the Mesa Margarita, Prickly Pear Margarita and the White Peach Margarita. In addition, Mesa Grill serves the Partida Margarita, which is made with the simplest of ingredients; tequila, lime, agave nectar and water — no triple sec or sucrose of any kind — which results in an incredibly balanced and unique flavor.

Bobby Flay discovered his culinary identity at 17 working as a cook at Joe Allen’s. Allen was so impressed with Flay that he paid the young cook’s tuition to The French Culinary Institute. Chef Flay first discovered the sweet heat of Southwestern ingredients working with Jonathan Waxman at Buds and Jams. Jerome Kretchmer offered Bobby Flay an opportunity at Mesa Grill, which opened in 1991. 

Mesa Grill will offer our full dinner menu with New Year's Eve pricing, as well as several holiday additions. An 18% service charge will be added to all checks. There will be no children's menu offered. Thank you.


Much-hyped food TV star" Bobby Flay exports his "enjoyable" NYC Southwesterner to Caesars via this "top-quality" venue where the "spicy," "unusual" cooking is a perfect match for the "glitzy" decor, "nonrushed" service and "upbeat" scene; while a few "don’t understand the allure" of "eating in the middle of a casino" for most this is "real-deal" dining from a "can-do-no-wrong" chef.


Other than the famous chef that resides at Mesa Grill Restaurant Vegas, they have a few good qualities that you can really enjoy. Like, the food, the real reason you came. They have the know on all of the best tequilas in Mexico, apparently since Vegas is so close or something. But Mesa Grill Vegas has great cocktails, many of which are as creative as the food.

Bobby Flay's 8,800-square-foot Mesa Grill houses a 28-seat bar and lounge, a three-tiered dining room and a bustling exhibition kitchen. The signature blue corn pancake appetizer with barbecued duck and tiger shrimp with a roasted garlic-corn tamale and corn-cilantro sauce, served for lunch and dinner, is a fine example of Flay’s vibrant cuisine.
